How to prepare?

- 1Wash the rice thoroughly under cold running water and soak it for 30 minutes.
- 2In a heavy-bottomed pot, bring the milk to a boil over medium heat, stirring occasionally to prevent scorching.
- 3Drain the soaked rice and add it to the boiling milk.
- 4Add the cardamom pods.
- 5Reduce the heat to low, and let the mixture simmer, stirring frequently, until the rice is cooked and the mixture starts to thicken, about 45-60 minutes.
- 6Once the kheer has thickened to your desired consistency, add the sugar, and continue simmering for another 5-10 minutes until the sugar has dissolved completely.
- 7In a separate pan (optional), melt 1 tsp of ghee and roast the cashews and raisins for a few seconds then add it to the kheer.
- 8Stir well and remove from heat.
- 9Serve warm or chilled, garnished with extra nuts if desired.
