- 1In a large bowl, combine the flour and water. Knead until a smooth, firm dough forms. Let it rest for 20 minutes, covered.
- 2While the dough rests, prepare the filling. Heat vegetable oil in a pan. Add minced ginger and garlic and saute for a minute.
- 3Add chopped onions and sauté till translucent. Then add the rest of the vegetables, all the spices and salt. Stir well and cook for 5-7 minutes or till vegetables are slightly cooked. Add chopped coriander.
- 4Divide the dough into small balls. Roll each ball into a thin disc of around 3-4 inches in diameter.
- 5Place a spoonful of the vegetable filling in the center of each dough disc.
- 6Carefully bring the edges of the dough together to form a pleated, half-moon shaped dumpling, or seal the edges in any shape you prefer.
- 7Steam the momos in a steamer for 15-20 minutes, or until the dough is cooked and the filling is heated through.
- 8Serve the hot vegetable momos with tomato chutney or sesame sauce.
