How to prepare?

- 1In a large mixing bowl, combine the urad dal flour, salt, cumin seeds, black peppercorns, and asafoetida. Mix all the dry ingredients well.
- 2Add water, little by little, to the mixture and knead it into a stiff, smooth dough. The dough should not be sticky.
- 3Divide the dough into small equal-sized balls.
- 4Place one dough ball between two pieces of parchment paper, and using a rolling pin, flatten into very thin discs.
- 5Carefully remove the paper and place the papads on a clean cloth or a tray. Dry them under the sun for 1-2 days until they are completely dried and brittle. This step is crucial for long-term storage.
- 6Once dried, the papads are ready to be roasted over an open flame, fried in hot oil, or microwaved.
- 7For roasting, place a papad on the rack or hold it with tongs over a low flame, turning it frequently until it puffs up and becomes crisp.
- 8For frying, heat oil in a pan and gently slide the papad in. Fry it for a few seconds until it puffs up. Remove from oil and drain on paper towel.
